Rich, fudgy brownies with a crackly top elevated by browned butter.
Ingredients
- 255 g unsalted butter
- 165 g semisweet or dark chocolate, chopped
- 45 g unsweetened cocoa powder
- 3 large eggs
- 150 g brown sugar
- 150 g granulated sugar
- 2 tsp vanilla extract
- 60 g all-purpose flour
- 6 g salt
- 75 g chopped chocolate or chocolate chips
Method
- Preheat the oven to 350°F / 175°C and line an 8×8-inch pan with parchment paper.
- Brown the butter in a saucepan over medium heat until the milk solids turn golden brown and smell nutty.
- Pour the hot browned butter over 165 g chopped chocolate and let it sit for a few minutes, then stir until smooth.
- In a separate bowl, whip the eggs, brown sugar, granulated sugar, and vanilla very well until the mixture is noticeably lighter, thick, and fluffy. This is an important step for creating the brownies’ thin, shiny, crackly top, so don’t stop mixing too early.
- Sift the cocoa powder into the melted butter and chocolate mixture and stir until smooth.
- Slowly pour the chocolate mixture into the egg mixture while stirring continuously.
- Fold in the flour, salt, and 75 g chopped chocolate or chocolate chips until just combined.
- Pour the batter into the prepared pan and spread evenly.
- Spread the batter evenly into the prepared pan.
- Bake at 350°F for about 28–34 minutes. The edges should be set and the top should look shiny and crackled, but the center should still be slightly soft. Be aware, a toothpick inserted near the center will not come out clean!
- Let the brownies cool in the pan before slicing.
